Do a Practical Fermentation Technology Course, Food Technology Study Program Students Practice Tape and Tempe Production
The Food Technology Study Program, Faculty of Agricultural Technology, Udayana University conducted a practicum for the Fermentation Technology Course on Tuesday, May 24th, 2022 at the Food Processing Laboratory of the Food Technology Study Program, Faculty of Agricultural Technology, Unud.
The Fermentation Technology Course Practicum was given by a Lecturer of the Food Technology Study Program, namely Dr. Ni Wayan Wisaniyasa, S.TP., M.P. with the material that is practice in the process of making tempe and tape products by treating various ratios of yeast concentration.
Through the practicum provided, students are expected to be able to get hands-on practice in the production process of several fermented products, namely tempeh and tape and it is hoped that students will be able to understand the production processes of these products and be able to observe the products produced which are assessed for their organoleptic properties by scoring and hedonic testing.
