“Kimpul” Can Be Healthy Noodles Rich in Fiber and Antioxidants in the Hands of a Lecturer in Food Technology Study Program, FTP Unud
Lecturer of the Food Technology Study Program, Faculty of Agricultural Technology, Udayana University (FTP Unud) provided training on processing kimpul into healthy noodles rich in fiber and rich in antioxidants through community service in order to optimize the local potential of Sanda Village, Pupuan Tabanan. The activity was held on Tuesday, July 5th , 2022, which was attended by Mrs. KWT Srikandi, Sanda Village, Pupuan, Tabanan.
Community service is carried out by a team from the Food Technology Study Program, FTP Unud, namely yaitu Prof. Dr. Ir. I Nengah Kencana Putra, M.S., A.A. Istri Sri Wiadnyani, S.TP., M.Sc., Dr. Ir. I Dewa Gde Mayun Permana, M.S., dan Dr. Gusti Ayu Kadek Diah Puspawati, S.TP., M.Si., I Gede Arie Mahendra Putra, S.TP., M.TP., Putu Supartini and Eva Nisaul Mufida. This service activity is one of the activities to optimize the local potential in Sanda Village, namely Kimpul which is processed into healthy noodles rich in fiber and antioxidants. Healthy noodles are produced without using wheat flour and added natural dyes from carrot and beetroot extracts so that all the ingredients used are local ingredients that are optimized into a product to support food security. In addition, assistance in the form of a pasta maker and sealer was also provided to KWT Srikandi, Sanda Village, Pupuan as one of the facilities that can support the process of making healthy noodles.
One of the representatives Mrs A.A. Istri Sri Wiadnyani, S.TP., M.Sc said that this training was aimed at optimizing the processing of kimpul which is a local potential of Sanda Village, Pupuan, Tabanan. The resulting product can also support food security programs because in the manufacturing process it does not use wheat flour and only utilizes existing local potential. He also hopes that with the training and assistance in the form of tools, KWT Srikandi can optimize the processing of the potential for kimpul, she said.
